I think that is why players whoever they are play till the last rally is over of the last set of the match. You never know what is going to happen. Even in the Serena match earlier even though deep down inside Wang most likely knew she was going to lose she was going to give 110% till that last point was played and that is the way it at least should be with all these professional players.

Players also know that Roger doesn't handle pressure well especially near end of sets/matches. Even the lowly are totally in tune with that fact and they know if I just keep the ball in play he will give it away. That's part of the problem.
