Some might be obvious, others less-so. I'd be curious to know who holds what matches most near and dear.
For example, as a Rafa fan, I love the 2008 Wimbledon final where he beat Roger, and the 2013 USO final over Djokovic. But I'm also fond of his come-from-seriously behind win over Nalbandian at Indian Wells in 2009.

as a Nalby fan my best memory is Masters 2005 but I also enjoyed Bercy 2007 and this incredible match vs Hewiit in AO's first round, it finished in the middle of the night, Nalby saved I MP, it was glorious

As a Safin fan, the semi against Roger at the 2005 AO comes top of the pile. Federer was my second fave and later became my fave when Safin retired.

I really got into Federer 2004 AO semi v Nalbandian also, as Nalby had Fed's number in those days. Federer took it in 4.

Federer/Murray at Wimbledon 2012 ranks up there too.

I have loads of these
Wawrinka's FO win over Novak.
Novak's USO win over Rafa.
Federer's Wimbledon wins over Murray. Particularly the semi last year. That was one of the best performances I've ever seen I think
Rafa's win over Roger in 2008 is up there too as a tennis spectacle. Didn't like the result, but loved the tennis. I'll contend to my dying day that it was too dark. I should know, I lived a 5 minute walk from the courts and it was waaaay too dark
Roger's win over Rafa in 5 sets the prior year as well (I was there live)
Edberg's second win over Becker at Wimbledon is high up there too. The first 2 sets is the best example of serve and volley dominance... ever
Connors comeback against Penfors
Edberg's dismantling of Courier at Flushing
Roger's dismantling of Hewitt at Flushing
Roger's win over Agassi at Flushing
Can't remember the name of the Eastern European guy, but his win over Rafa at Wimbledon with the roof. The guy was in the zone, that was extraordinary

Great picks @Federberg... I was thinking more along the lines of active or recently retired players when I picked a couple... How the hell did I not think of Edberg... he's my favourite player of the ages.

I actually preferred Edberg's first win over Becker at Wimbledon in that rain-interrupted match. Becker was the heavy favourite and not a whole lot of people knew that much about Edberg outside hardcore tennis fans, despite the fact he had a couple of AO's in the bag.

The Edberg win over Courier was just a massacre.... absolute perfection.

Connors comeback against Pernfors was big... I was a fan of Mikael, followed most of the Swedes around that time - Edberg, Nystrom, Pernfors, Jarryd. Connors just produced an epic comeback.

@Federberg It was a Central European guy, a Czech, and his name is Lukas Rosol.

I first of all love those 2011 No1e's finals won over Rafa, not only slams but masters too. Also some finishes of the matches against Federer and Nadal when he played on such a level that I think no one has ever played better. It's hard to pick.
